  1. In pan over medium-high heat, cook shrimp, garlic and coconut oil for 5-8 minutes, or until shrimp are cooked. 

  2. In medium-sized pot over medium heat, combine coconut milk, broth and seasoning. Add bell pepper, mushroom, shrimp and bay leaf. Cover and simmer 10 minutes. 

  3. Remove bay leaf and garnish with cilantro and more seasoning.
