No-Bake Spirulina Goji Energy Balls

Ingredients
  • 1 cup raw pumpkin seeds
  • ½ cup unsweetened shredded coconut
  • 3 Tbsp. goji berries
  • 2 tsp. spirulina powder
  • 2 Tbsp. coconut oil
  • ¼ cup maple syrup
Instructions
  1. In food processor, pulse pumpkin seeds and shredded coconut until pumpkin seeds are mostly broken down.
  2. Add remaining ingredients and continues to pulse until batter sticks together.
  3. Scoop mixture out by the tablespoon.
  4. Store balls in fridge for a few day or in the freezer for a few months.
