  1. Preheat oven to 325 degrees F.
  2. In bowl of stand mixer, combine sugar, olive oil, and vanilla and mix for 2 minutes. (Alternatively, add to bowl and use hand mixer to combine.)
  3. Stir in eggs; mix for an additional minute.
  4. Add in flour, baking powder and salt until just combined.
  5. Stir in buttermilk.
  6. In 9” spring form pan, pour batter.

  7. Top with cherries.
  8. Bake for 50-60 minutes (until toothpick inserted in center of cake comes out clean).
Recipe Notes

Tip: Out of cherries (or simply not a fan)? Substitute any fresh berry in its place! For an extra addition of flavor, add some lemon zest into the batter.
