Thought you had to wait for a birthday or anniversary celebration to enjoy a delicious slice of homemade cake? Good news: cake can be the cherry on top of any day, even just a regular old Tuesday!
This gluten-free, summer-inspired confection is actually very simple to make, and the result just might make you feel like a reality show baking champion. One bite and you’ll see why this recipe takes the cake, thankyoucherrymuch.

Summer Cherry Cake
Ingredients
- 1½ cups pure cane sugar
- ⅓ cup olive oil
- 1 tsp. vanilla
- 3 eggs
- 1½ cups gluten-free flour blend
- 1 tsp. baking powder
- ½ tsp. salt
- ½ cup light buttermilk
- 1½ cups fresh cherries, pitted & halved
Instructions

Preheat oven to 325 degrees F.

In bowl of stand mixer, combine sugar, olive oil, and vanilla and mix for 2 minutes. (Alternatively, add to bowl and use hand mixer to combine.)

Stir in eggs; mix for an additional minute.

Add in flour, baking powder and salt until just combined.

Stir in buttermilk.

In 9” spring form pan, pour batter.

Top with cherries.

Bake for 50-60 minutes (until toothpick inserted in center of cake comes out clean).
Recipe Notes
Tip: Out of cherries (or simply not a fan)? Substitute any fresh berry in its place! For an extra addition of flavor, add some lemon zest into the batter.
