Ingredients
  • 4 slices pork bacon
  • 2 cups brown rice cooked
  • 2 cups frozen peas & carrots
  • 8 whole eggs
  • 8 egg whites
  • 6 green onions sliced
  • Optional: Coconut aminos
  • Salt & pepper to taste
Instructions
  1. In large skillet, cook bacon over medium-high heat until crispy. Remove and drain on paper towels, leaving grease in the pan.
  2. Add peas and carrots until tender, about 3-4 minutes. Sprinkle salt and pepper.
  3. Whisk eggs.
  4. Push veggies to the side and pour in egg mixture, scrambling until fully cooked. Mix with veggies.
  5. Add cooked rice, mixing so it’s all combined. Add additional salt and pepper as needed.
  6. Separate into four containers for prepped breakfasts. Garnish with green onions.
