Instructions
  1. Cut tops off peppers, leaving stems intact. Gently hollow out insides. Rinse; set aside.
  2. In large bowl, toss together shrimp, pesto, collagen powder, crushed red pepper flakes, salt, pepper, lemon juice and olive oil.
  3. Fill each pepper with mixture; replace top. Cover; refrigerate until ready to serve.
  4. To serve, garnish with fresh chopped basil or parsley.
