  1. Preheat smoker or oven to 350 degrees F.
  2. Pat chicken dry. Rub olive oil over skin; season with generous amount of salt and pepper. Let sit 30 minutes; smoke 1 hour to 1 hour 30 minutes, until internal temperature of thickest section reaches 165 degrees F.
  3. Meanwhile, heat large pot or Dutch oven over medium-high heat. In cooking oil, sauté onions for 3 minutes. Mix in garlic, curry powder and turmeric powder. Mix in onions and garlic; continue cooking 2 minutes. Remove from heat.
  4. Let chicken rest 30 minutes. Separate white and dark meat; cut into cubes or shred.
  5. In large pot over high heat, mix together coconut milk, chicken broth, spices, lime and pinch of salt and pepper. Once boiling, mix in chicken and bok choy. Reduce heat to simmer. Cover; cook 10 minutes.
  6. Serve over rice. Top with chili and fresh cilantro.
