  1. To make cashew cheese, soak raw cashews in water for several hours or overnight. Drain and rinse. Add cashews to blender with nutritional yeast and small amount of water; blend to desired consistency, adding additional water as needed.
  2. Pre-heat oven to 350 degrees F.
  3. Stuff artichoke centers with cashew “cheese.” Drizzle with avocado oil. Top with breadcrumbs, if desired.
  4. Bake 20-25 minutes, until bubbly brown.
