Ingredients
- 4 artichokes steamed and cut in half
- 1 cup raw cashews
- ¼ to ½ cup nutritional yeast
- Grain-free breadcrumbs optional topping
- Avocado oil to drizzle
Instructions

To make cashew cheese, soak raw cashews in water for several hours or overnight. Drain and rinse. Add cashews to blender with nutritional yeast and small amount of water; blend to desired consistency, adding additional water as needed.

Pre-heat oven to 350 degrees F.

Stuff artichoke centers with cashew “cheese.” Drizzle with avocado oil. Top with breadcrumbs, if desired.
