Looking for a standout starter or side dish? Stuffed artichokes are hard to beat for their flavor and their nutrition. The buttery taste of the artichoke just gets better when it’s stuffed with cashew “cheese.” We’re all eating more at home now; what better time to experiment with new vegetable options. Dig in!
To make cashew cheese, soak raw cashews in water for several hours or overnight. Drain and rinse. Add cashews to blender with nutritional yeast and small amount of water; blend to desired consistency, adding additional water as needed.
Pre-heat oven to 350 degrees F.
Stuff artichoke centers with cashew “cheese.” Drizzle with avocado oil. Top with breadcrumbs, if desired.
Bake 20-25 minutes, until bubbly brown.
