Preheat oven to 350°F. Spray eight individual ramekins with cooking spray; place on baking sheet.
In large bowl, combine all ingredients. Pour batter into each ramekin.
Bake 40 minutes, until middle is cooked through.

*Instead of pre-made cornbread mix, make your own by combining 2/3 cup cornmeal, 2/3 cup gluten free flour, 1 tablespoon coconut sugar, 2 teaspoons baking powder and 1/2 teaspoon salt.
