Vegan Cornbread Casserole
Served in individual ramekins, these tasty cornbread casseroles are perfect for your next holiday gathering. Made with vegan-friendly ingredients, each serving is moist, creamy, fluffy and downright delicious. Plus, since everything is mixed together in the same bowl, whipping them up is a breeze. For a sweeter cornbread casserole, serve them topped with honey. For a spicy, more savory cornbread casserole, serve them with topped with jalapeños.
Vegan Cornbread Casserole
- 1 can (15 oz.) corn (drained)
- 1 can (15 oz.) creamed corn
- 1/2 cup dairy free sour cream
- 1/2 cup dairy free cheese (shredded)
- 1/4 cup coconut oil (melted)
- 1/2 tsp. salt
- 1 box (16 oz.) gluten-free cornbread mix*
- 1 bunch green onions (chopped)
- Preheat oven to 350°F. Spray eight individual ramekins with cooking spray; place on baking sheet.
- In large bowl, combine all ingredients. Pour batter into each ramekin.
- Bake 40 minutes, until middle is cooked through.
*Instead of pre-made cornbread mix, make your own by combining 2/3 cup cornmeal, 2/3 cup gluten free flour, 1 tablespoon coconut sugar, 2 teaspoons baking powder and 1/2 teaspoon salt.
