They aren't dried or fried in oil like most other quick noodles, which often contain preservatives and artificial flavors and colors. In Japan, savory udon broth is the base of many delicious soups. For my version of Udon Noodle Soup, I've made the broth completely vegan so all of you can enjoy the unique taste of this traditional favorite.

Delicious and healthy, this warming soup is filled with soft, fresh cooked (not dried!) udon noodles, tofu, bok choy and shiitake mushrooms. Keep a few bowls in your desk and cupboards then just heat and serve for a tasty nutritious meal at home or work. Happy Eating!   ~ Annie


Microwave Cooking Directions
1) Place noodles in bowl and pour a cup of hot water over the noodles to soften.
2) Using the lid, drain water from noodles.
3) Add soup base and toppings to moistened noodles.
4) Add 1 to 1 1/4 cups of water and loosely cover with lid.
5) Microwave on high for 1-2 minutes, until noodles ar hot (CAUTION! Bowl will be hot after microwaving.)
6) Stir well and enjoy!

No Microwave? Add 1-1 1/4 cups boiling water to soup base, toppings and noodles.
Cover with lid and let stand 2 minutes.

Good Soup This box soup is a great starter soup or eat as is. We always add lots of veggies and soup it up to make a one dish meal. I wish it had a lesser amount of sodium, but, I generally just reduce the amount of the flavoring package the soup includes. December 12, 2012

Great Product! My teenage daughter eats this soup ALL THE TIME! I love the fact that she would rather have this than a bag of chips or chocolate. When I buy ten + at a time, the clerks at the grocery store always ask me about it; when I say it's for my daughter, their eyes get big! The soup smells really bad but I'm told it tastes really good!
