The creamy texture and delicate, nutty flavor of cranberry beans make them an excellent choice for soups, pasta dishes and cold bean salads. They are high in fiber and a good source of iron.


Directions

Sort and rinse 1 cup of beans.  Place in a pot with 4 cups of water. Cover and bring to a boil. Reduce heat to medium-low and cook until tender, about 1 hour. Add more water as needed to keep beans covered with water while cooking. Makes 4 servings (about 3 cups)

Delicious alternative to regular pinto beans! These beans are like pintos, but plumper and sweeter. They are also a bit more expensive, but worth the cost. One tip to quicker cooking: soak them overnight in one or two teaspoonfuls of baking soda, then throw away the soaking water and rinse well. The beans will cook much more quickly when you add bicarbonate of soda. Great product, and worth a try! April 29, 2013
Tasty as a stew Dr. Oz recommended these beans so I decided to give it a try. Very tasty. Soak overnight. Next day I cook them in the pressure cooker with chicken/vegetables. Family enjoyed it too. Recipe at the back of the package. October 5, 2012
