Tasting Notes

Assam is a full bodied Black Tea that brew up a burgundy-red cup with rich aromas and an uncomplicated, malty flavour. Enjoy it hot any time of the day with a little milk and sugar to bring out the tea's delicate sweetness. It is also delicious served with lemon or as iced tea for hot summer days.



This tea is named after the region of its production: Assam, India. This part of India experiences high precipitation with hot daytime temperatures that create greenhouse-like conditions of extreme humidity and heat. This tropical climate contributes to Assam teas reknown and unique malty taste. Presently, the Assam region produces more than half of all the tea grown in India.


Historically, Assam is the second largest commercial tea production region after China. Assam & China are the only regions in the world with native tea plants; Assam tea comes from a varietal of the familiar Camellia sinensis (tea bush).


This Assam Black Tea is further distinguished by the way it is processed: fresh-picked tea leaves are gently rolled to beak them and left to oxidize, or "ferment." Once oxidized, they are roasted to seal in the flavours. This traditional tea is oxidized for a longer period and roasted more heavily than other, more milk varieties of tea, creating its unique malty characteristic.


The art of tea has evolved to include many rites and rituals; here are just a few that can affect the taste of your tea:


• Using good water is an essential part of brewing a great cup of tea. We recommend using good quality spring mineral, or filtered water.

• Rinse your teapot and cup with hot water immediately before brewing your tea. By keeping the water temperature high while steeping, more of the subtle aspects of your tea will be extracted from the tea leaves. Also, your tea will brew more quickly and stay hot longer.

• Water temperature is critical. For this tea, we recommend heating your water until it is vigorously boiling then letting it cool slightly before pouring over the teabag(s).

• Use one teabag per cup of tea desired. Pour hot water over teabags, cover and steep, peeking & stirring occasionally. Optimal brewing time is between 2 and 3 minutes.

• As a tea cools, you will notice that its taste changes dramatically. Be sure to experiment and you may find more character in a specific tea than you ever imagined.
