To shorten cooking time and make them easier to digest, soak cannellini beans before cooking. Rinse first, then place beans in a large bowl and cover with water. Let the beans soak for eight hours, or overnight, in the refrigerator. Drain water and re-rinse the beans. To cook, combine one cup of beans and four cups of water in a large pot. Bring water to a boil, reduce heat and simmer for about an hour and a half.
