The tartness of apricot combines beautifully with the delicate sweetness of a layer of melted white chocolate on top. With their out-of-this-world taste, no one will guess how down to earth they are to make.

White Chocolate-Topped Apricot Oat Bars

					Ingredients
Bars
- 1 cup quick oats
 - ½ cup dried apricots chopped
 - 1 very ripe banana mashed
 - ⅛ tsp. pink salt
 - 1 Tbsp. Bob’s Red Mill egg replacer
 - 2 Tbsp. water
 - ¼ cup unsweetened dairy-free milk
 - ¼ cup finely shredded coconut
 - 2 Tbsp. coconut oil
 
Topping
- 1 cup white chocolate chips
 - 2 tsp. olive oil
 
Instructions
- 
										Preheat oven to 350 degrees F.
 - 
										Line 7x11 baking pan with parchment paper.
 - 
										In small bowl, mix 1 Tbsp. egg replacer with 2 Tbsp. water and let thicken for 1 minute.
 - 
										Mix together all bar ingredients, spoon into baking pan and smooth out.
 - 
										Bake 20 minutes.
 - 
										In double boiler, melt white chocolate with olive oil over medium heat for 5 minutes.
 - 
										Pour melted chocolate over apricot bars.
 - 
										Chill 30 minutes to one hour until chocolate is set. Cut into 12 bars.
