Caramelized onions
- 2 yellow onions sliced
- ¼ tsp. garlic salt
- 2 Tbsp. Nutiva buttery coconut oil
- 2 Tbsp. olive oil
Pasta
Chicken
- 1 lb. chicken breasts cut into strips
- 2 Tbsp. olive oil
- 2 tsp. minced garlic
- ½ tsp. oregano
- ½ tsp. thyme
- ½ tsp. dried basil
- ¼ tsp. dried parsley
- Dash sea salt
Dairy-free Alfredo sauce
- ¼ cup plant-based cream cheese
- ¼ cup vegan parmesan cheese
- 3 Tbsp. Sproud plant-based milk

Instructions

In 12-inch pan or a cast iron skillet, heat coconut oil and 2 Tbsp. of olive oil over medium heat.

Add onions and sauté for 5 minutes or until starting to soften.

Add salt, reduce heat to medium low and cook for 30 minutes, stirring every few minutes, or until onions are soft and golden brown.

While onions are caramelizing, cook pasta according to package directions. Drain and set aside.

Season chicken with spices.

In separate pan, heat olive oil on medium-high heat.

Add chicken and cook 8 minutes, flipping halfway through.

Add Alfredo sauce ingredients; stir to combine.

Add onions and cooked pasta; toss to combine.

Serve topped with pine nuts and vegan parmesan.

Tips:
If at any point onions start to stick to pan, reduce heat to low and stir continuously to prevent burning.
