Dairy-Free Chicken Pasta With Caramelized Onions & Pine Nuts

Ingredients

Caramelized onions

Chicken

Dairy-free Alfredo sauce

Instructions

  1. In 12-inch pan or a cast iron skillet, heat coconut oil and 2 Tbsp. of olive oil over medium heat.
  2. Add onions and sauté for 5 minutes or until starting to soften.
  3. Add salt, reduce heat to medium low and cook for 30 minutes, stirring every few minutes, or until onions are soft and golden brown.
  4. While onions are caramelizing, cook pasta according to package directions. Drain and set aside.
  5. Season chicken with spices.
  6. In separate pan, heat olive oil on medium-high heat.
  7. Add chicken and cook 8 minutes, flipping halfway through.
  8. Add Alfredo sauce ingredients; stir to combine.
  9. Add onions and cooked pasta; toss to combine.
  10. Serve topped with pine nuts and vegan parmesan.

Recipe Notes

Tips:

If at any point onions start to stick to pan, reduce heat to low and stir continuously to prevent burning.
