When time is scarce and motivation is short, there’s one important kitchen utensil that can help you put together a mouthwatering meal in just a few minutes. Armed with just a skillet, you can cook up juicy chicken breasts (sprinkled with a secret dusting of gluten-free biscuit mix to seal in the flavor) and a heaping helping of healthy broccolini. One pan, two hungry mouths: dinner is done!
One-Skillet Chicken & Garlic-Lime Broccolini
Ingredients
 
 2 organic chicken breasts, pounded thin
 ¼ cup gluten free biscuit mix
 Salt and pepper, to taste
 ¼ cup organic olive oil
 2 cloves garlic, crushed
 8 ounces broccolini
 Juice of half lime
Directions
- Place chicken In resealable plastic bag and pound to 1/2” thickness.
 - Remove chicken from bag and add biscuit mix; toss to evenly coat chicken. Sprinkle with salt and pepper on each side.
 - In frying pan or cast iron skillet over medium heat, warm olive oil. Add chicken and cook 5 minutes on each side until golden brown.
 - Add crushed garlic and broccolini to pan; reduce heat to medium-low, cover and cook for an additional five minutes.
 - Squeeze half of a fresh lime over broccolini only.
