Easy Mango Salsa

Party time? Mango salsa will get the fiesta started. Mixed with red pepper, citrus juice, fresh cilantro and a smidge of pink salt, it’s a colorful, zesty dip that will make you say “gracias.” This recipe is quick and easy, taking only a few minutes to mix together. It makes a delicious addition to grilled fish, tacos and fish sticks. Or it can be served with tortilla chips for a light snack. Want to make it? Of course you do! We probably had you at mango.

Easy Mango Salsa

Ingredients

1 mango, peeled and chopped
2 mini red bell peppers, chopped
2 Tbsp. cilantro, minced
Juice of half lemon
Juice of half lime
Pinch of pink salt

Directions

  1. In a large mixing bowl, combine chopped mango and chopped pepper. Mix in cilantro.
  2. Squeeze half of lemon and half of lime over mixture. And a pinch of pink salt to taste.
  3. Stir all ingredients to incorporate the flavors.
  4. Serve immediately over fish tacos or as a dip for fish sticks, blue corn tortilla chips or multigrain snack chips. Store refrigerated in an airtight container for up to 2 days.
