Paleo Banana Walnut Pie

There’s no longer a need to cross off pie from the “foods-you-can-eat” list if you’re following a paleo diet. Made with ingredients like bananas, walnuts and coconut oil, this simple, wholesome dessert is a treat for any health-conscious sweets addict. Share it at your next potluck party or make one to spoon into after dinner on a busy weeknight.

Paleo Banana Walnut Pie

Ingredients

Filling
2 bananas, plus extra for garnish
3/4 cup water
1 cup walnut butter
1/4 cup maple syrup
3 Tbsp. coconut oil, melted

Crust
3 cups walnut pieces, plus extra for garnish
1/2 cup coconut oil, melted
1/4 cup sucanat cane sugar

Directions

  1. Preheat oven to 325 degrees F.
  2. In food processor, pulse walnuts and sucanat until it resembles coarse crumbs (do not over process). Stir in coconut oil.
  3. In a pie pan, press mixture into bottom and sides. Bake for 15 minutes.
  4. Once crust has cooled, slice bananas and array on top.
  5. In a food processor, combine walnut butter, maple syrup, water and coconut oil until smooth.
  6. Pour filling over crust and smooth out with a spatula.
  7. Place pie in freezer for 4-6 hours or until firm.
  8. Allow pie to sit at room temperature for 15 minutes before serving.
  9. Garnish with extra walnuts or bananas.
