-
Preheat oven to 350 degrees F.
-
Heat skillet over medium heat. Add bacon and cook until rendered and brown. Remove from pan. (Do not clean pan.)
-
Peel potatoes and cut in half length wise. Cut thin slices in the shape of half circles.
-
Add onions to pan and cook in the grease for 2 minutes. Add potatoes, few sprigs of dill, salt and pepper. Cook for 2-3 minutes, mixing occasionally.
-
Roll out puff pastry once or twice to give it shape. Lightly butter or grease a tart or pie dish. Lay puff pastry over dish and press into pan. If there is excess dough hanging over, you can trim it off. Crimp the edges of the pastry to form a crust.
-
Fill crust with potato mixture. Spread potatoes evenly across the dish and create layers. Top with chopped bacon and heavy cream.
-
Bake for 20 minutes then raise temperature to 420 degrees F. Top with cheese and bake for another 15 minutes or until golden brown.
-
Remove and allow to cool for 10-15 minutes before slicing. Top with sour cream and chives.
