Farro, Arugula and Grapefruit Salad

Ingredients
Salad
  • 2 cups farro
  • 4 cups broth
  • Shallots
  • Garlic
  • Olive Oil
  • 1 grapefruit peeled
  • Coconut sugar
  • Radishes cut into ¼” pieces
  • 1 Persian cucumber cut into ¼” pieces
  • ½ container arugula
Salad dressing
Instructions
  1. In medium pot, bring farro and broth to boil; reduce heat to just above simmer; cook 30 minutes, stirring occasionally. Drain.
  2. In small frying pan, sauté shallots and garlic in oil until bubbling. Lower heat to low-medium; continue cooking until crispy. Place shallots on paper towel. Reserve oil.
  3. On sheet pan, arrange grapefruit; sprinkle coconut sugar on top. Broil three minutes.
  4. Whisk together shallot, garlic oil and ingredients for dressing.
  5. Arrange salad, cooked farro and grapefruit on plate and serve with dressing.
