Ingredients
Frosting
  • 1-1/2 cups avocado mashed (2 avocados)
  • 1 cup melted Hu Gems
  • 1/4 cup PRI Honey or organic maple syrup
  • 1 tsp. vanilla extract
Garnish
  • 1/2 cup fresh cherries
  • 1/3 cup fresh strawberries
  • 1/3 cup fresh blueberries
  • 1/4 cup fresh cranberries
Instructions
  1. Preheat oven to 350 degrees F. Grease 8-inch round cake pan with buttery oil.
  2. In mixing bowl, whisk together eggs, oil, water and vanilla. Fold in cake mix until well combined. Pour batter into pan and bake 30-37 minutes or until toothpick inserted in center comes out clean.
  3. In blender, blend together all ingredients for frosting until completely smooth.
  4. When cake is completely cool, spread on frosting.
  5. Arrange berries evenly on top.
