Ingredients
  • 1 tortilla of choice
  • 1 cup fresh spinach chopped
  • 1/2 cup sliced white mushrooms or baby Bella mushrooms
  • 2 oz. goat cheese crumbled
  • 1 clove garlic minced
  • 1 tsp. olive oil
  • 1/2 tsp. dried oregano
  • Salt to taste
  • Pepper to taste
  • Salsa to serve
Instructions
  1. In frying pan over medium heat, heat olive oil and garlic until garlic becomes fragrant.
  2. Add mushrooms, oregano, salt and pepper. Cook until mushrooms are tender, about 5 minutes.
  3. Stir in chopped spinach and cook 1-2 minutes until wilted. Remove from heat.
  4. On one half of the tortilla, spread mushroom-spinach and sprinkle crumbled goat cheese over it. Fold empty side over loaded side.
  5. Heat a dry frying pan over medium heat. Place folded quesadilla on pan and cook about 2-3 minutes per side, pressing lightly with a spatula, until golden brown and crispy.
  6. Slice into wedges and serve with salsa.
