Ingredients
  • 2 ears grilled corn off the cob
  • 1 cup multi-color cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup basil leaves
  • 1 clove garlic minced
  • 1 Tbsp. white wine vinegar
  • 2 Tbsp. olive oil
  • 1 Tbsp. water
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 4 oz. crumbled cotija cheese optional
Instructions
  1. Whisk together garlic, vinegar, olive oil, water, salt and pepper until thoroughly mixed.
  2. In large bowl, combine corn, tomatoes, onion, black beans and basil. Pour dressing over; toss.
  3. Top with cotija cheese.
