Ingredients
  • 9 oz. jackfruit drained & shredded
  • 1-2 avocados
  • 1 zucchini sliced or diced
  • 1 yellow squash sliced or diced
  • 1-1/2 cups red orange, and/or yellow pepper, sliced or diced
  • 1 cup red & purple cabbage shredded
  • 2 Tbsp. extra virgin olive oil
  • 2 tsp. chipotle hot sauce
  • 1 Tbsp. nutritional yeast
  • 2 limes freshly squeezed
  • Cilantro dried or fresh, to taste
  • 1/4 cup pumpkin seeds
Optional: 1 chayote squash, sliced or diced
Optional: grain-free chips, for topping
Instructions
  1. In large bowl, combine jackfruit, cabbage, squash and peppers.
  2. Dress with extra virgin olive oil, chipotle hot sauce and fresh lime juice.
  3. Top with diced avocado or guacamole and cilantro.
Optional: Crumble grain-free chips for additional crunch.
