Could your burrito bowl use a refresh? Try this plant-based alternative – a vegan burrito bowl – bursting with brightly-colored vegetables and loaded with crunch and flavor. A base of shredded jackfruit offers meat-like texture alongside a rainbow of squash, zucchini, peppers and cabbage. But don’t be shy about using the veggies you have on hand (or the ones that make your mouth water). The must-have Mexican-inspired flavors come from avocados, cilantro, lime juice and chipotle hot sauce. Crumble grain-free chips to complete the flavorful fiesta!
