Instructions
  1. In blender or food processor, combine tofu, honey, coconut oil, lemon juice and lemon zest; blend until smooth and creamy. Add honey to desired sweetness.
  2. Refrigerate mixture for at least 6 hours, or until thick.
  3. In small ramekin or serving glass, layer cake, lemon parfait and whipped cream.
  4. Top with lemon zest and drizzle of honey.
  5. Refrigerate until ready to serve.
Recipe Notes
  • For a vegan option, replace honey with maple syrup.
  • Recommended cake: vegan vanilla or pound cake.
  • For homemade coconut whipped cream, refrigerate 1 can of full-fat coconut cream. Scoop out solid portion into mixing bowl and beat with hand mixer on high speed until fluffy. Add maple syrup or honey for sweetness.
