What is coconut oil?
Coconut oil comes from the pressed flesh or “meat” of fresh coconuts. It’s packed with beneficial nutrients, especially medium chain triglycerides (MCTs), a type of type of healthy fat that’s easily absorbed and used by the body.
While normally solid (with a “buttery” texture) at room temperature, coconut oil converts to liquid when warmed to about 76 degrees. But Vitacost® Liquid Coconut Oil comes—and stays—in pourable form, no matter how hot or cold your kitchen gets.

Swap in coconut oil instead of other liquid vegetable oils (canola, olive, etc.) in recipes. Simply measure out the same amount.

Use to stir fry vegetables, meat or tofu.

Lemon-Cream Dessert Parfait (Vegan)
This light and refreshing dessert parfait includes tart, scrumptious layers of vegan lemon mousse, cake and coconut cream. Honey, lemon juice and lemon zest are added to a base of silken tofu, then blended into a satiny, satisfying mixture. Layer with dainty cubes of vegan vanilla cake or personalize with a cake flavor of your choice. Top with
homemade whipped coconut cream and a sprinkle of lemon zest. Eat slowly to make it last!
Lemon-Cream Dessert Parfait (Vegan)
- 16 oz. silken tofu
- 1/2 cup honey
- 1/3 cup coconut oil (melted)
- 1/4 cup lemon juice
- Zest of 1 lemon
- Cake of choice (cubed)
- Coconut whipped cream
- In blender or food processor, combine tofu, honey, coconut oil, lemon juice and lemon zest; blend until smooth and creamy. Add honey to desired sweetness.
- Refrigerate mixture for at least 6 hours, or until thick.
- In small ramekin or serving glass, layer cake, lemon parfait and whipped cream.
- Top with lemon zest and drizzle of honey.
- Refrigerate until ready to serve.
- For a vegan option, replace honey with maple syrup.
- Recommended cake: vegan vanilla or pound cake.
- For homemade coconut whipped cream, refrigerate 1 can of full-fat coconut cream. Scoop out solid portion into mixing bowl and beat with hand mixer on high speed until fluffy. Add maple syrup or honey for sweetness.
