Instructions
  1. Soak dates in warm water for 10 minutes to soften, then drain.
  2. In food processor, pulse pitted dates. Transfer to large mixing bowl and stir in remaining ingredients and mix until well combined.
  3. Cover and refrigerate for 1-2 hours or overnight.
  4. Using hands or cookie scoop, form mixture into 1-in balls.
  5. Enjoy immediately or store in sealed container in refrigerator for up to 1 week.
