  1. Preheat oven to 350 degrees F.
  2. In large bowl, mash bananas.
  3. Mix in remaining ingredients, stirring in cinnamon chips last.
  4. Pour batter into muffin pan.
  5. Bake 20-25 minutes.
  6. Top each muffin with crunchy peanut butter.
Notes:
  1. Swap cinnamon chips with chocolate chips, walnuts or coconut flakes.
  2. To make bread instead, use loaf pan and increase baking time to at least 55 minutes. Bread is done when toothpick inserted in center comes out clean.
