Pumpkin Alfredo Sauce Over Penne Pasta

Ingredients
Optional: 2 cups steamed broccoli or other cooked vegetables.
Instructions
  1. Cook pasta according to package instruction and set aside.
  2. To a large sauté pan over medium heat, add olive oil and garlic slices. Sauté 2-3 minutes until garlic is lightly browned. Set garlic aside.
  3. Add prepared alfredo sauce, pumpkin and chopped thyme leaves to pan. Stir to combine. Lower heat to simmer and cook 5-8 minutes.
  4. Add cooked pasta, toasted garlic, broccoli and chopped thyme. Stir to combine.
  5. Cook another 2-3 minutes making sure everything is hot.
  6. Taste and adjust seasonings as needed.
  7. Top with sprig of thyme and a sprinkle of shaved parmesan
Recipe Notes
  • Add more protein to your dish with lentil based pasta or chickpea pasta.
  • Add sliced chicken sausage or spicy Italian sausage.
