Pumpkin Alfredo Sauce Over Penne Pasta

Ingredients
- 12 oz. penne pasta
- 2 Tbsp. olive oil
- 2 cloves garlic peeled and sliced
- 15 oz. alfredo sauce
- 15 oz. pumpkin puree
- 3 sprigs fresh thyme
- 2 Tbsp. shaved parmesan
Optional: 2 cups steamed broccoli or other cooked vegetables.
Instructions

Cook pasta according to package instruction and set aside.

To a large sauté pan over medium heat, add olive oil and garlic slices. Sauté 2-3 minutes until garlic is lightly browned. Set garlic aside.

Add prepared alfredo sauce, pumpkin and chopped thyme leaves to pan. Stir to combine. Lower heat to simmer and cook 5-8 minutes.

Add cooked pasta, toasted garlic, broccoli and chopped thyme. Stir to combine.

Cook another 2-3 minutes making sure everything is hot.

Taste and adjust seasonings as needed.

Top with sprig of thyme and a sprinkle of shaved parmesan
