  1. In medium pot, combine rice, coconut milk, water, curry powder, salt and pepper. Bring to boil; cover and simmer 10 minutes.
  2. Stir rice, add vegetables, cover and simmer 5 minutes.
  3. To serve, garnish with cilantro and lime.
