Homemade White-Chocolate-Covered Strawberries

  1. Melt cacao by setting up a double-boiler. Add 2 inches of water to a small saucepan, bring to boil and place a glass bowl with cacao butter over sauce pan. Decrease heat to simmer and stir cacao butter with silicone or wooden spatula until melted.
  2. Add coconut oil to bowl and let melt.
  3. Remove from heat and stir in powdered sugar until melted. Add vanilla. Let cool.
  4. Stir in hard white creamy portion of coconut milk and refrigerate bowl for 10-15 until soft but not firm.
  5. Carefully dip strawberries in white chocolate, twisting each to coat all sides. Place on serving platter.
  6. Melt mini chocolate chips in double-boiler. Drizzle melted chocolate over each dipped strawberry. Allow to chocolate to fully set.
  7. Store leftovers in fridge and consume within 48 hours.
