Tropical Fruit Pizza Cookies
Give your guests a dessert that’s a work of art! These soft, chewy sugar cookies are transformed into vibrant masterpieces with beautiful berries and tropical fruits. To make the fruit pizza cookies, bake a batch of sugar cookies, whip up a cream cheese frosting and chop a colorful palette of strawberries, kiwis, mango and raspberries with a side of blueberries. Use this image as inspiration or come up with original designs. They’ll look as impressive as a classic French tart without all the fuss.
Tropical Fruit Pizza Cookies
Sugar cookies
- 1-1/4 cups all-purpose flour
- 1/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup butter (softened)
- 3/4 cup sugar
- 1 tsp. vanilla extract
- 1 large egg (well beaten)
Frosting
- 8 oz. cream cheese (softened)
- 1/4 cup butter (softened)
- 1 tsp. vanilla extract
- 1 cup powdered sugar
- 1/8 tsp. salt
Toppings
- 8-10 strawberries (finely chopped)
- 2 kiwis (finely chopped)
- 1 mango (finely chopped)
- 12 raspberries
- 1 cup blueberries
Sugar cookies
- Preheat oven to 350 degrees F and line cookie sheet with parchment paper.
- In medium mixing bowl, add flour, baking powder, baking soda and salt. Mix well.
- In stand mixer bowl, add butter and sugar. Use beater attachment and mix until creamy.
- Add egg and vanilla extract. Mix well to combine.
- Add flour mixture and mix at low speed until combined.
- Divide dough into 12 pieces and shape into balls.
- Place balls on lined cookie sheet about 2 inches apart.
- Bake 10-12 minutes or until edges turn golden brown. Let cookies rest a few minutes before transferring to wire rack to cool.
- Make sure cookies are completely cool before frosting.
Frosting
- In stand mixer bowl, place cream cheese, butter, powdered sugar, vanilla essence and salt. Beat until mixture is smooth and creamy.
- Making the fruit pizza
- Spread frosting evenly on cookies.
- Top cookies with fruits. (Note: Use the recipe photo for inspiration.)
- Serve immediately after assembling.
To prep ahead, cookies and frosting can be made in advance. Fruits that don’t brown can be chopped ahead of time. Assemble just before serving.
