Waffles
  1. Shred zucchini and set aside.
  2. In medium bowl, mix flour, baking powder, salt, garlic powder and onion powder.
  3. Add milk and eggs. Mix them with dry ingredients until batter forms.
  4. Fold in zucchini and cheese.
  5. Heat waffle iron and brush with oil or melted butter. Cook each waffle until golden brown for about 5 mins.
  6. Serve with lemon garlic yogurt dressing.
Dressing
  1. In blender or food processor, blend yogurt, lemon juice, garlic and salt. Drizzle on warm waffles before serving.
  2. Waffles can be stored in fridge in airtight container or zip lock bag for few days.
