Ingredients
Optional: 1 tsp. fennel seeds, crushed
Optional: 1/4 tsp. red pepper flakes
Instructions
  1. Crumble tofu into bowl.
  2. Heat olive oil in large skillet over medium heat. Add chopped onion and cook until softened and translucent, about 5 minutes. Add minced garlic and cook another minute until fragrant.
  3. Stir crumbled tofu into skillet with onions and garlic. Pour in soy sauce and maple syrup. Sprinkle smoked paprika, crushed fennel seeds, dried thyme and red pepper flakes over tofu. Season with salt and black pepper, to taste. Stir until evenly coated.
  4. Cook, stirring occasionally, about 20 minutes, or until tofu is browned and slightly crispy.
  5. Serve hot in breakfast scrambles, burritos, pasta sauces or as a side.
Recipe Notes
  • Press tofu for at least 30 minutes to remove excess water. The drier the tofu, the better the texture.
