  1. Preheat oven to 350 degrees F. Grease cake pan.
  2. In mixing bowl, combine cocoa, pureed beets, oil, vegan butter, chia/flax “eggs,” vanilla and optional sweetener.
  3. Gently fold in chocolate chips.
  4. Transfer batter to cake pan. Smooth out top.
  5. Bake 15-25 minutes, until toothpick comes out clean or until you reach desired texture.
