We are delighted to bring this versatile cake mix to your home. Made with a perfect blend of gluten free flours and starches, this mix can be easily transformed into your favorite custom cake or cupcake recipes that call for a white cake, or simply bake as directed for a delicate vanilla cake.


Directions

Ingredients You Will Need:

1 whole package Bob's Red Mill Vanilla Cake Mix

3 large whole Eggs, at room temperature

1/2 cup Vegetable or Canola Oil

1/2 cup Water, at room temperature

 

Preparation (for 9-inch layer cake)

Preheat oven to 325 degrees. Generously grease two 9-inch round nonstick (gray, not black) cake pans. Line bottoms with parchment paper or wax paper, then grease again.

Mixing

In large mixing bowl, beat eggs for 30 seconds on medium-low speed. Add mix, then oil and water. Beat for 60 seconds on medium-low speed, scraping down sides of bowl with spatula. Divide batter evenly in pans; smooth tops with spatula.

Baking

Place pans 3 inches apart on middle rack of oven and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Cool cakes in pans on wire rack for 15 minutes. Run sharp knife around edges to loosen cakes, then invert onto separate plates to cool completely before frosting.

Did not like I made cupcakes with this and they tasted so bad that I decided not to bring them to a party I was going to bring them to. I followed the directions so that was not the issue. The mix has a funny smell to it but I still gave it a shot. The final product tastes just like it smells. I figure it is probably the potato starch in the mix. It is also not sweet enough in my opinion. My husband spit out the cupcake when he tried it. I'm surprised many people seem to like it in the reviews. This is not for people who are used to eating "regular" cupcakes made with flour. The taste is really different. June 15, 2015
Best Cake Ever! Wow! This is the first vanilla cake ever that we can eat gluten free. Mine tastes just like pound cake and this recipe never needs frosting. Maybe a scoop of almond butter instead, but always need to add bits of dried fruit. I use Paradise Found Banana Mango Pineapple. Yum! May 28, 2015

Winner! Prior to using Bob's Red Mill Cake Mix, I'd used another gluten-free all purpose baking mix to make a cake. It was yucky - very strong fava bean taste - doable for those of us who truly cannot eat wheat or gluten, but, not truly enjoyable. So....thought I'd try Bob's Red Mill to see if I could do better. So very glad I did. Finally - NO "off" taste in the cake. I also used the cake mix in a cookie recipe that I've made for other people - it's one of the favorite cookies in our family and I figured I might as well give it a try. The taste was very good - I will tweak the recipe for texture next time. Using the vanilla gluten free mix in the typical cookie recipes out there that call for a cake mix (2 eggs/oil), I believe reducing to 1 egg and backing off on the oil will bring the end result cookie into a more traditional texture. Highly recommend Bob's Red Mill Gluten Free Cake Mix! So far - every gluten-free mix I've tried from Bob's Red Mill has been excellent. January 2, 2015
Very nice, light cupcakes This produced some very nice, light cupcakes. The batter was "sticky" because of the xantham gum and other binders, but they turned out great. We added some unsweetened coconut and a tsp of vanilla extract, and these cupcakes were a hit! November 22, 2014
