super sweet and quite like traditional cake
Yes, the first ingredient is sugar. The resulting texture is much closer to a "real" (gluten) cake than anything else we have tried.
This was the first time we tried this mix. We just wanted a plain spice cake, so did not add anything but the eggs and coconut oil (instead of 'vegetable'). We filled 20 silicone cupcake liners and baked for about 30 minutes. For some reason, the dough puffed up and looked just like a traditional cupcake, and then a few minutes later, they had all fallen and sunk in the middle. The result was not pretty, but plenty tasty. I'm not sure if this was a result of using coconut oil, or failing to add any other ingredient, or the silicone liners.
I will be ordering a few more boxes to keep on hand, and most look forward to making this with zucchini. I'd prefer to avoid any of the additions that are evenly slightly sweet, as I could barely eat one without feeling ill (I'm not a sweets person at all). I'm sure with a little more trial and error, I will find the perfect way to prepare it.

It is moist and has wonderful flavor. could be used to make other spice flavors.

Great with pumpkin!
I have made this cake twice - both times with pumpkin. The first time I made it vegan and substituted applesauce for the eggs and the second time I made it as the box recipe stated. The first version was more dense and moist/wet, but it was for a friend who is vegan and I got rave reviews. The second time I also got great reviews. All around good mix!

YUM! You'd never guess it is GF!
I made this spice cake last night for guests and followed the instructions on the box for Pumpkin Spice Cake, substituting the optional 3/4 cups of nuts for 3/4 cups of Enjoy Life mini morsels. I then frosted the cake with cream cheese frosting. It was a hit with the adults and kiddos alike! The texture was fabulous - not gritty or gummy at all, and very moist and fluffy. I'm definitely keeping this on hand for quick dessert needs!

delicious but ......
I made the Apple Spice Cake from the recipe on the back of the box. It was delicious, but I had to bake it for 60 minutes-not 33 as recommended in the recipe. I needed to cover it with tin foil so that the cake would not get overly brown. It still cooked unevenly. I have two more boxes and I am skeptical about using them.
Vitacost- you need to rework the recipe especially the egg/oil amounts so that the batter resembles cake batter, not a runny liquid.
