Double Chocolate Almond Butter Cookies

Whether your holiday cookie jar needs filling or a time-out from the shop-wrap-repeat ritual is long overdue, these clean-eating treats are a treasure this time of year. A little chocolate never hurts, but it’s actually good for you when it’s dark. This recipe doubles the benefits with rich cacao powder and chunks of 70% dark chocolate spun together with velvety, smooth almond butter. Santa (and your health coach) will approve!

Double Chocolate-Almond Butter Cookies

Ingredients

1 cup smooth almond butter, stirred well
1 large egg
3 Tbsp. raw cacao powder
3 tsp. stevia extract
1/4 tsp. baking soda
1/4 tsp. sea salt
3 oz. dark chocolate (70% or higher), broken into small piece

Directions

  1. Preheat oven to 350 degrees F.
  2. In a medium-sized bowl, stir together first six ingredients until blended. Stir in chocolate pieces.
  3. Drop dough by rounded tablespoons onto sprayed baking sheets.
  4. Bake for 10 to 12 minutes or until lightly brown.  Let cool on baking sheet for five minutes, then remove to a wire rack and let cool for 15 additional minutes.
