Instructions
  1. Preheat oven to 350 degrees F and prepare loaf pan with cooking spray.
  2. Combine all ingredients except for blueberries and lemon zest.
  3. Gently fold in blueberries and half of lemon zest.
  4. Pour batter into prepared loaf pan. Top with more blueberries.
  5. Bake for 45-50 minutes or until toothpick comes out clean.
  6. Top with fresh lemon zest before serving.
