Einkorn Lemon Poppyseed Loaf

Made with Jovial’s wholesome all-purpose einkorn flour and a splash of extra virgin olive oil, this loaf brings together simple ingredients in the most delightful way. Each slice is moist and tender thanks to creamy yogurt and fresh lemon juice, with flecks of poppy seeds adding a bit of crunch and classic flair. Topped with a light, lemony glaze and a sprinkle of extra seeds for good measure, this loaf is just the thing to pair with a cozy cup of tea or share with your brunch bunch. Einkorn Lemon Poppyseed Loaf

Dry Ingredients

  • 2 cups Jovial All-Purpose Einkorn Flour
  • 2 tsp. baking powder
  • 1/2 tsp. sea salt
  • 1/4 tsp. baking soda

Wet Ingredients

  • 2 eggs + 1 egg yolk
  • 3/4 cup granulated sugar
  • 1/2 cup Jovial Extra Virgin Olive Oil
  • 1/2 cup plain yogurt
  • 1/3 cup fresh squeezed lemon juice

Other Ingredients

  • Zest of one lemon
  • 2 Tbsp. poppy seeds (plus more for dusting)

Glaze

  • 1/2 cup powdered sugar
  • 2 tsp. milk or water
  1. Preheat oven to 350 degrees F and grease a 9x5 inch loaf pan.
  2. In medium bowl, sift together dry ingredients.
  3. In stand mixer fitted with wire whip attachments, beat eggs and sugar on high for 4 minutes until mixture forms thick ribbons.
  4. In medium bowl, combine remaining wet ingredients and lemon zest.
  5. Fold in half of the flour mixture into the egg mixture. Fold in half of the yogurt mixture. Repeat. Fold in poppy seeds.
  6. Pour batter into prepared loaf pan.
  7. Bake 40-42 minutes.
  8. Let cool in pan for 30 minutes, then transfer to wire rack to cool completely before slicing.
  9. To make glaze, mix powdered sugar and water together until smooth. Spread over bread.
  10. Store at room temperature for up to 3 days.
