Instructions
  1. Refrigerate canned coconut cream overnight (make sure can is upside down).
  2. Open can, scoop coconut cream from the top into medium mixing bowl and drain liquid.
  3. Add maple syrup and vanilla extract to coconut cream. Use hand mixer to combine until peaks form and mixture thickens (like whipped cream).
  4. Sandwich 1 tablespoon coconut filling between two snack bars. Gently press together and freeze for 2-3 hours to solidify before serving.
