Ingredients
  • 1 cup dairy-free yogurt plain
  • 1/2 cup or 2 small cucumbers grated, liquid pressed out
  • 2 Tbsp. fresh dill minced
  • 4 tsp. lemon juice
  • 1 tsp. olive oil
  • 1/2 tsp. salt
  • 1/8 tsp. black pepper
Instructions
  1. Peel cucumber and finely shred over a fine mesh strainer set on a plate, this will allow the liquid to pour out. Press shredded cucumber into mesh strainer to remove excess liquid.
  2. In a small 2 cup size bowl, stir cucumber into yogurt. Add remaining ingredients to the sauce and stir. Chill at least 30 minutes before serving.
