Baked Cauliflower Poppers
Why do so many appetizers seem to be made from foods not deemed healthy enough for your entrée? Mounds of fried, oily cheese, mayonnaise-drenched dips, deep-fried anything—they're all loaded with calories, carbs, sodium or cholesterol. It’s time to banish the bad and introduce a healthier appetizer to your table! These Cauliflower Poppers are baked with diet-friendly foods, but it’s the addition of green chiles that will keep you coming back for more. Hungry between meals? Enjoy them instead as a healthy snack!

Ingredients
2 cups cauliflower, cut into small pieces (stalks & flowers), steamed
1-2 Tbsp. olive oil
1/2 cup Bob’s Red Mill Paleo Flour
1 chia/flax egg
1 Tbsp. fresh rosemary
Pinch of sea salt
1/4 cup Ortega Fire-Roasted Chiles or mild diced green chiles
1-2 Tbsp. nutritional yeast, optional

Directions
- Preheat oven to 350 degrees F. Lightly grease a baking sheet.
- In a high-speed blender, pulse all ingredients into a mashed potato-like consistency.
- Using a spoon or tablespoon, scoop out balls of mixture and place on prepared baking sheet.
- Bake for 20-25 minutes.
