Instructions
  1. In mixing bowl using hand mixer or stand mixer on medium speed, cream butter and for 1-2 minutes; add eggs and food coloring and mix until well combined.
  2. Add cocoa powder, flour, baking powder and salt and mix until dough is smooth.
  3. Onto parchment-lined baking sheet, scoop one tablespoon of dough at a time, arranging about 3 inches apart; place in freezer for one hour.
  4. Preheat oven to 350 degrees F. Remove cookies from freezer and bake from frozen for 10-12 minutes.
Note: Add sprinkle of powdered sugar and/or small white chocolate chips if desired.
