Marinade
Chipotle serving sauce
Garnish
  • Chives chopped
Instructions
  1. To press tofu, cut blocks in 3 equal parts lengthwise. Place pieces on cutting board. Cover with clean dish cloth. Top with heavy cook book. Let drain 1 hr.
  2. In small bowl, whisk together all marinade ingredients.
  3. Slice drained, pressed tofu into cubes. In large bowl, combine tofu cubes and marinade. Refrigerate 1-2 hours.
  4. To barbecue, slide tofu cubes onto skewers. Brush grill with olive oil and let it burn off. Brush more oil on grill and add skewers. Cook 15-20 minutes on each side, flipping once.
  5. For chipotle serving sauce, combine all sauce ingredients in blender and blend well.
  6. To serve, pour sauce into sauce bowls and set on plate with tofu.
