Divide pie dough into two equal portions. Work with one half, keeping other half chilled in fridge.

Preheat oven to 400 degrees F and line baking sheet with parchment paper.

On lightly floured surface, roll out dough to approximately 1/4-inch thickness.

Using a 3-1/4-inch heart-shaped cookie cutter, cut out 36 hearts from dough.

Lightly brush outer edge of each heart with egg wash.

Spoon approximately 1 tablespoon of chilled strawberry filling onto center of half of hearts.

Place remaining hearts on top, egg wash side down, creating a sandwich. Press edges together and use fork to crimp and seal.

Place assembled hand pies in fridge for 15 minutes to chill.

Remove from fridge and lightly brush tops with egg wash.

Bake for 18-22 minutes or until hand pies achieve a golden-brown color.

Once baked, remove from oven and transfer hand pies to wire rack to cool.

Repeat process with remaining half of dough while the first batch is baking.
